Mango Coconut Vegan "Sabayon"

Ingredients:

14 oz coconut milk 1 ½ cup chopped mango (fresh or frozen) a pinch of sea salt 3 cups of organic berries (strawberries, blueberries and/or raspberries)

½ tbs freshly squeezed lime juice fresh mint and/or coconut flakes for flavor and decoration


Preparation:

Put the coconut milk in a saucepan and stir in the mango and a pinch of salt and simmer for around 15-20 min until the mango is soft. Pour into a food processor and process until smooth. Let it cool and add the lime juice. Spoon over the berries of your choice and garnishing with mint or coconut flakes.
